- 12 oz bittersweet chocolate (opt for a gourmet variety like Guittard or Ghirardelli)
- 1/3 cup heavy cream
- 1 tsp pure vanilla extract (substitute Irish cream, coffee, orange liqueur, etc.)
- Cocoa powder for dusting (also try chopped pistachios, toasted coconut, etc.)
In a heavy-bottomed medium saucepan over medium heat, combine chocolate and cream until chocolate is melted and mixture is smooth. Remove from heat and incorporate flavoring. Let set in refrigerator until firm enough to roll into balls (approximately 1 1/2 hours).
Roll into 1-inch balls and dust with cocoa powder. Roll again into chopped nuts or fruit, if desired.
